Hornbrook's vacuum still operates at lower pressures than the traditional atmospheric distillation used to produce most gins. This allows distillation to occur at lower temperatures, preserving the more delicate flavors and aromas present in our botanicas. Heat-sensitive compounds that contribute to the unique flavor profile of Hornbrook gin, such as elderflower, cucumber, chamomile, and jasmine are better preserved under vacuum conditions. These compounds are responsible for the distinctive scents and flavors of our gins. Vacuum distillation provides our distillers with a way to emphasize and preserve these characteristics.
